You can always cook up the ground meat with a little taco seasoning (or chili powder, garlic powder, onion powder and salt, which is pretty much what it is) and then freeze the crumbles to make tacos or add to salads or whatever. I have better luck with freezing cooked meat to reheat than refreezing uncooked in terms of actual using it up. Frozen crumbles are convenient; frozen raw meet requires remembering to take it out at the right time and then use it pretty quick after it thaws.
