I hope you don't mind me making an observation and a suggestion. From what you've written, it seems to me that you're eating a fairly high calorie diet in general, not just from carbs.
It's good that you're limiting your drinking to the weekends, but remember all alcohol is fairly high in calories - the sugar, so while you might have fewer carbs with wine or rum, you may not be saving as many calories as you think.
When I decided to get serious about losing weight, I went to a registered dietician. I don't know if your insurance would cover it, and if not, if you could afford it, but it really helped me. I got to see the dietician for free because I live in a high priority (read poor and under serviced) neighbourhood so a few years ago the gov't set up a community health hub, that has Dr's, nurse practitioners, and dietitians plus a host of community groups. They're services are all covered by the gov't. The dietitian taught me all about serving sizes, which were a lot smaller than I thought, and gave me some good suggestions for subbing lower calorie foods for higher calorie foods.
When I first went to see her, I weighed 214 lbs, and I'm now down to 186. I've been plateaued around that mark now for about a month, so I'm thinking of going back to the dietician for a tweak.
I basically eat what I want, within reason- like not having a high calorie desert every night, but I keep a food log and count calories rather than worrying about carbs.
