It's a what's-in-the-pantry kind of dinner night. I had a handful of carrots, a squash with a soft spot that needed to be used, some herb dinner rolls in the freezer that didn't rise well so were really heavy, and a giant head of cauliflower that's got aphids in it (ew).
I'm making carrot-squash coconut curry soup with giant herb dinner roll croutons, and I'm soaking the cauliflower to get the bugs off and maybe roast it.
They should have a Mom version of Chopped, where the professional cooks have to try to cook with whatever is in the fridge, and there will be someone at the door, a barfing cat in the other room, a kid who needs help with homework, and a toddler that wants to help or a teen that wants to go to the mall right now. Whoever gets something nutritious and sort of tasty on the table by dinner time without running away or swearing and kicking the trash can wins.
