"No man has seen God at any time." (This refers to all three aspects of Him: Father, Son,and Holy Spirit.)
"God is a Spirit, and they that worship Him must worship Him in spirit and in truth." (So we know that one aspect of God is the Holy Spirit, but also we tend to believe that God the Father is a Great Spirit beyond our comprehension now.)

We know that Christ, God the Son, looked just like the other Jewish people. Remember how Judas Iscariot had to "point him out" to the soldiers by kissing Him? He was of Jewish descent in that respect. Just as short/tall, probably dark skinned like them when being in the sun all day, and earlier as a carpenter, and facial features just as they had. His tongue was of the language of the day, probably aramaic greek. He didn't have blond hair and blue eyes. He might have had reddish hair, as that was a common trait (remember Jacob and Esau?) and being in the sun again... but most likely did have brown eyes and dark hair. I'm sure he was the healthiest any person could be, and that would mean a lean, strong body too.

It is widely held by theologians that the "in the image" refers to us physically, to being triune. We have body, mind, spirit. With regards to attributes, we were also sinless, and able to fellowship with God. You can't fellowship with someone "beneath" or "above" you. You can be friendly, acquaintances, but for true fellowship, you have to have someone who is on the same page, just like you. So I believe that we were created with full intelligence.(Think how scientists say we only use a very small percentage of our brain's ability? I think that's because of the fall into sin.)
