"unstable", when a pdoc says it, is just a symptom statement, but when your father says it, it is very judgmental. I can easily see how you would find it very, very hurtful. Try emailing or messaging him with "Your telling me that I am unstable, regardless of whether this is factually true, was judgmental and unappreciative of me".
