That sounds like a good and sustainable plan. I guess my only additional suggestion is that when/if you allow yourself starchy carbs, consider sticking to whole grains. They need not be totally forbidden, for sure. Whole grains, fruit, and veggies are good for us, as you know. What I disliked about lower carb eating was that I felt deprived of many fruits and veggies, and thus nutrition.
