I don't think most diet food is really "healthy" at all. Always seems to taste less then satisfying and/or leave aftertaste that is not pleasant.
I'm trying to eat food that is less processed - such as whole wheat bread. I don't care for a sandwich made with whole wheat - except for PB&J. Somehow PB&J tastes pretty good with wheat bread - at least to me. But I do like toasted wheat bread for breakfast and sometimes with lunch. I purchase a couple of loaves of wheat bread and store them in the freezer. That way the bread doesn't get stale before it is eaten.
Another fun snack that I like is to put spagetti sauce on the wheat bread along with some pizza cheese and toast in the oven. yummy.
I like whole grain rice as well. I put that in the freezer also so that I can pull out for a fast heat up in the microwave.
