I can definitely identify with what you wrote about overdoing tasks from my own personal experience. Although the details of our lives are quite different, I can in fact identify with many of things you write about. Since I am not a doctor or medical professional, I cannot offer advice that you or anyone could or should rely upon.
What helps me personally when struggling against obstacles you mentioned is to aim for improvement rather to completely solve the difficulty. It is hard for me to put this into words. Instead of aiming at 100% I aim to do anything more than zero each day to remove the obstacle. In this I can see progress which helps motivate me. This has helped me with overdoing tasks.
Hopefully others here will have better words for you than my poor words! I am so sorry I could not be helpful to you.
