It's easier to tackle the monster camps by stealth at night at about 10pm (in gametime) they usually go to sleep then you can creep up on them and do the sneak strike then nick any meat they have cooking! If there's anylookouts take them out first...if its raining heavy (in game) they have less chance of hearing you sneak up on them too!
The monsters around the bottom of plateau going towards the split peak to Kakariko village are easier. ...but as you level up in the game in fighting ability, so do the enemies!
You can avoid most of them and do the main quest first. I think the Lynels and the Guardians (you need a guardian shield to get any chance of getting passed them or defeating them) are the hardest and the hardest boss is the desert one cos he moves so damn fast! ..he's really hard to lock target on him.
