Hubby and I are seriously thinking about not only the trip to France, but maybe visiting New Jersey sometime in the early spring. We'll see. I just told Hubby that we NEED to do SOMETHING. Waiting around here doing nothing is ridiculous.
I've decided to make meat a lesser part of our diet. I'm hoping to make at least three vegetarian dinners each week, minimum. And some of the ones that aren't I'm hoping will be just smaller amounts of meat, like in stir fries or other dishes where veggies or pulses dominate. Tonight I'm planning on making a crispy tofu dish with string beans and rice. Another meal on my list is an Indian inspired lentil daal with naan bread. Maybe I'll add some cauliflower and peas to that as they go well with various curry flavors.
