Trying new recipes is always an adventure, usually for the worst. Not much I hate more food-wise than wet bread. Ick. Maybe it was too much water in the mix and it needed reduction. Or did you drain the grease from the meat before the mixture? Those two usually cause the excess liquid. Could solve the flavor problem if it was excess grease.

Nice that someone gave you a good recipe though. I'm finally starting to get a collection of good ones. Taken me some years though.
