Yes very much a variation, original haggis has chopped offal (heart lungs etc) and I’m afraid I’m not a fan, I was vegetarian until recently and still not a fan of offal. Veggie version’s pretty tasty though, used green lentils.

Like you, I'm not a big fan of offal. Most Americans aren't, other than maybe the much older folks. In Czech Republic, it's still pretty popular. One of the most common restaurant soups contains liver dumplings. Czechs also like sausages and other meat products with all kinds of stuff in it. There is also a popular goulash that translates to "Slaughter Day Goulash" that has pretty much all of the offals they have to use. And tripe soup is common.
