But **** me, man. This isn’t fair or right and I’m kinda pissed off right now about it.

I understand and that's a hard place to be in.
I do think though that you can establish boundaries with your coworkers.
Just say "no." I mean it's probably the hardest thing to do (I think as humans we are like wired not to say no to things maybe), but just say no.
You don't have to provide any reasoning either.
This is what I've done (I am still working on it in certain areas of my life), but it actually is quite powerful in helping me to take control of my own life.
