I'm so sorry @AncientMelody, the long covid sounds awful. I have done acupuncture in the past with great success. I had recurring kidney infections and western medicine wasn't helping, at all (strong antibiotics that had side-effects but wasn't curing the infections). Acupuncture completely stopped the cycle of infection.
I do tend to have insomnia, but have also found valerian useless. Melatonin, though, is very helpful.
