Ironically I found a solution just months later after years of suffering.

My issue was motility - food sitting in my stomach for too long, determined by a stomach emptying test. A medicine called Domperidone helped me a lot (one of my coworkers suggested it, not my doctor). Chronic constipation had also caused it.

A gastro doc also advised me that I must always sit down to eat, chew thoroughly and not rush, and make sure I have regular bowel movements approx every day. I take Metamucil and if needed milk of magnesia.

Please keep seeing doctors, regardless of if you go to the ER. I hope you have the coverage.
I do have an appointment. The issue is he is booked. Until June 14th. I'm on a cancellation list. Yeah to be honest my anxiety is kinda funky and I think its just all the pain. Not anything legit wrong with my mental health.

At this point I'm for sure going to the ER in the morning.
