They had scriveners. Also - writing does take time and the physical writing out of thoughts/documents has a different effect on the brain than typing. Plus it was usual and everything took time and more effort.
Or one becomes quite concise. But generally, if one was raised in a culture of writing, I think it is possible to find satisfaction in handwriting out a personal letter even if it is not as quick as typing.
