It is hard. I don’t know a good path for me either. Protein diets never worked for me. I would always end up eating too many calories and too much protein. Eating say a steak dinner with veggies on the side never filled me anymore than eating a sandwich on white bread. I don’t know what the balance is but I better figure it out soon. You mention the apron stomach thing (I hadn't heard that term, but know what you mean). That can also happen with hormonal changes. Not sure of your age, but perimenopause (which can start late 30s, early 40s) can shift how your body distributes fat and weight. So it could be a hormonal thing. Speaking of, have you had your thyroid checked recently? Ideally, a full thyroid panel, not just TSH.
You could also consider seeing a dietician or nutritionist, but I'd start with tracking your food intake, as they'd likely ask that anyway (we saw one for our daughter once).
