My T knows next to nothing about eating disorders - but I love him and am attached to him, so I don't want to switch. His solution is to consult with another therapist who DOES specialize in eating disorders, and I think he's going to take a continuing education class in eating disorders too.

I wonder if your T would be open to consulting with another T so he can help you?
