if the chemical buildup you are worried about is called calcification it can be fixed with white vinegar or tablets you add to the water to clean the machine. i have only seen bunn machines in diners and restaurant supply shops.
diner coffee has never been great. diner owners always have to watch the bottom line to make out. but their coffee is very hot so you can't taste much of it. thats why it needs so much milk.
