What you tell me gives you a good defense for appeal or whatever...
That you weren't just a short time, part timer goes to your benefit. That you have documentation of all that is a good thing. (I know it hurts to view it and realize how much you're struggling though.)
Contact the ADA and/or a lawyer (free consult via phone?) and ask them what your options are. He didn't even give you 2 weeks notice? Was that in your employment agreement?
Anyway... try to stay amicable... as you might win back the job and you wouldn't want anything you said to make that experience worse.

What is it you really want, need from this situation? Try and decide that, and then go for it.
