So long story short i am in college and I feel like i might suffer from inattentive ADHD. I have really been thinking about going to get an official evaluation, problem is my school can't do it and my insurance only covers me in my home state (apart from emergency room stuff)

So I COULD see someone back home over thanksgiving break. But my problem is that i'd only be home a week. Even If i could get in to see someone would it A) be enough time to get a diagnosis? B) would the doctor be willing to treat me/give me mediation of i'm not going to be around for them to monitor me?

I'll be home for a month after semester but i really don't want to wait till then because I have a lot of work i need to do this semester and it's getting really hard to keep track and stay on top of it all.

idk what to do

I don't know how it'll work for you. Different doctors have different ways of doing things. I'll just tell you how it was for me.
I did a full day of testing. Took about 7 hours with a lunch break. Then the lady put together all the results and gave it to the psychologist who studied the data to put together a formal diagnosis. I met up with her after a couple of weeks when she explained results, but I don't see why that couldn't have been done over the phone. She mailed me the results and that was that. You could probably get a GP to work with your ADHD meds. That's what I'll be doing.
