As the primary cook for an extended family, I am looking for ideas of quick, easy, inexpensive, and delicious meals to cook for dinner. Tonight, for example, we had rice and beans. Few dishes are cheaper, easier, or tastier.

What are your go-to meals? Looking forward to some great ideas.

Here are a couple of blog entries which came up when I searched "easy-prep meals"

Crockpots have oodles of healthy recipes and are generally just chopping prep in the mornings then you leave them to cook.

2-3lbs London broil, big jar of Tostitos salsa, bunch of garlic cloves (I love garlic) 8 hrs on low in crockpot or four in high. With one hour left cook some rice maybe some beans. Shred it up with a fork (at this point touching it will fall apart) and you got one tasty yummy dish.

1/3 cup soy sauce, 1/3 cup olive oil 1/3 cup lemon juice, about 8 garlic cloves, 2 lbs thin chicken or tenderize the crap of boneless chicken, marinate over night. Remove from ziplock (that's what I marinate in) grill chicken. Serve with rice or some cooked veggies. That lol probably be around 20 minutes.
