In profile privacy there is contact information option which is set by default to everyone. What is this information? Does this include the email address, for example?

Yes...There are no options. So much for privacy.

You can view what information is public by visiting any member's public profile to see what's public. Email addresses are not public.
Only logged-in members can view a member's profile information. No bots or un-logged in users can view a member's user profile.

No, you cannot hide information on your profile from other members that we haven't explicitly made private (such as your name or postal code).
