Hi everyone -- Just wanted to share an awesome recipe with you guys for breakfast cookies!
My friend posted it on Facebook, and they looked and sounded delicious, so I made a go at it! Here's the recipe: INGREDIENTS 1 1/2 cups uncooked oatmeal, quick or old fashioned 2 ripe bananas, mashed 1 cup unsweetened applesauce 1/3 cup raisins, (or any dried/non-dried fruit) 1/4 cup chopped walnuts, (any kind you prefer, you don't need them) 1 tsp vanilla extract (or almond) 1 tsp cinnamon (or more, to taste) DIRECTIONS Preheat heat oven to 350 degrees. Mix vanilla extract & cinnamon into the applesauce. Blend applesauce mixture with all other ingredients & let sit for 10 minutes Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into rounds. Bake approx. 30-35 minutes, or until golden & done. Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack. Store in a covered container when completely cool. I didn't have any bananas, but still wanted to try them out, so I Googled banana substitutes and found out that you can use pumpkin instead, so I decided to try it out! So, here's the recipe I used (changes are italicized for easy recognition): INGREDIENTS 1 1/2 cups uncooked oatmeal, quick or old fashioned 3/4 cup pumpkin puree 1 cup unsweetened applesauce 1/3 cup raisins, (or any dried/non-dried fruit) Craisins (dried cranberries) 1/4 cup chopped walnuts, (any kind you prefer, you don't need them) No nuts 1 tsp vanilla extract (or almond) 1 tsp cinnamon (or more, to taste) DIRECTIONS I followed the recipe directions, just substituting the pumpkin for banana. Here's how they turned out: ![]() |

I'm not sure. My guess would be about 2-3 though since they're pretty small and my friend said it was breakfast for a week (I made 2 dozen).

Oh YUM
![]() I like your idea of substituting the banana with the pumpkin. I think these would be awesome with dried blueberries too! |

You could always make them in the shape of a Breakfast Bar. Just think of them as Muesli.

I made them the other day using bananas and dates, no nuts.
They are very tasty and I will. Be making them again! Thanks for sharing the recipe! |

I'm going to get the ingredients when I go grocery shopping (hopefully this weekend) so I can have them for my morning classes. It's so much cheaper in the long run than what I currently do (buy granola bars to take to class), and probably a lot healthier too! Glad to hear they worked out well! |
