usually i make my moms ham & bean soup recipe with dried great northern beans but this was the 1st time ive ever made split pea soup..
once i finish eating this pot of split pea soup i think maybe il make a pot of french onion soup next... |

Years ago Sunday was a pot roast with potatoes and carrots. But now days no. It’s hard to get mum to eat. Tonight was one chicken enchilada cut in half. With the smaller half going to mum. Mixed veggies with the cauliflower and carrots for mum and broccoli for me. I very much doubt mum will finish hers. But it was delicious. The local grocery makes fresh enchiladas in containers for one, two and four. We get the one and split it. Less waste that way. They also have excellent marinated chicken breast. Because they are quite large I just get one and split it between us, or else I end up throwing a half a one away as mum won’t eat that much. Most of my meals are this type of easily baked entree and frozen veggies. Works for us. I’ve never been an exceptional cook, this is more my speed.

In the colder months, Sunday nights at our house were almost always a roast chicken with mashed potatoes and lots of veg, boiled, and a fresh salad. When it got warmer, however, Sunday nights were often burgers on the grill and a cold salad plate; something Dad could definitely help with.
These days, with the price of meat (and so many other things) so sky-high, we just cook up whatever I can find on sale during the week. I do know how to make a pretty nice homemade pizza, so there's always emergency supplies around to make a few of those. |

Yesterday, I made ham and eggs for lunch with leftover homemade salad. A homemade apple walnut galette (see attached) because we had an afternoon guest. Also for dinner, Parmesan-Panko tilapia with roasted spiced potatoes and microwaved mixed veggies.

I’ve got lentil and veggie (potato carrots and leeks) soup defrosting for tonight, I might make some quick dumplings to go into it, it’s cold today so this should hit the spot.

Had the galette for breakfast. For lunch, homemade Bohemian potato soup. By fixings, I simply mean a plate with toppings plus various condiments and pickled options to eat on or with. I put out lettuce, tomatoes, red onion, sliced pickles, čalamáda, radishes, yellow pepper strips, catsup, mayo, and mustard. Served with a poppyseed kaiser roll. We chose what we wanted. Hubby ate his roll separately. I eat the burger on each side of the roll (open-faced) with a fork and knife.

My husband found this cut of beef called teclas de lomo the other day. We used to buy it at a specialty shop years ago when we lived in another area. I can't find a translation, but they look like this: Donde comprar Teclas de lomo . We grilled them and also grilled 4 tomatoes, a bell pepper, 3 green chilis, a head of garlic and an onion. He put all the veggies in a food processor to make salsa. Then we heated up some blue corn tortillas on the grill and filled them with the meat and salsa. They were really good.

Made banana overnight oats for breakfast. Later made a batch of strawberry scones, most of which I'll freeze. Tonight I plan to make a lemon shrimp and zucchini pasta dish with penne.

@Discombobulated - that sounds tasty. This hotel in the mountains in the south of the country that we have visited many times has something like that on the menu I always order it once during our stay.
