It’s 2:30 pm and I haven’t had breakfast yet. I’m thinking of going to a Dennys like restaurant for a Mediterranean omelette. I got a 20% off coupon. That would be me meal for the day. Besides opening cans, going to restaurants is my speed. I hate cooking for one.

Baked some chicken legs coated with l'herbes de Provence for dinner, along with baked from frozen sweet potato fries, and some microwaved mixed veggies (carrot/peas/corn/cauliflower). The other meals were reheated leftover things I made the day(s) before.

I made sweet and sour chicken tonight, a little late celebration for Chinese New Year - it was good, not sure why I haven’t made it more often. Had it with some rice.

I baked two things in preparation for some friends visiting this weekend. The first is a Bishop's bread, which is an egg-white intensive sweet bread with chopped hazelnuts, lemon essence, and chocolate chunks. The other is a lemon cake that I also baked in a loaf pan. The lemon cake was only in order to use the leftover egg yolks that I didn't use in the Bishop's bread.

Breakfast and lunch were leftovers. For dinner...not sure yet, even though it's already after 6 pm. Maybe some Chinese appetizers. Lunch was big enough.

I bought prepared food for one that usually last two meals. I got salmon over wild rice with broccoli. Instructions are to nuke it. But I switch it to an oven dish and bake it. Much better that way. Bought two pasta dishes too and salad kits. Just my speed.

That sounds amazing and very European!

We had a veggie Haggis last night, which was mostly lentil and oat based, because it was Burns night. Left overs tonight.

I made this nice simple snack as the oven was on, roasted some almonds with paprika and a little chilli powder.

That bishop bread sounds wonderful. I remember once you said you’d love to cook for someone, I wish that someone could be mum and I. Everything you cook and bake sounds so delicious.

@Discombobulated, that sounds like a yummy way to prepare the almonds! My husband often roasts the raw nuts we get from the grocery store, but hasn't experimented with nice spices on them. I roasted the hazelnuts for my Bishop's Bread only because they taste so much better that way and it gets rid of the skins. I also love candying nuts. I have a simple version with just sugar and butter, and another version where I make a sweet buttery egg white mixture I put on sliced almonds before baking.

I have never had Haggis, though it sounds like your version tonight is not the norm. A variation?

A while back, my husband and I watched the movie called "Phanthom Thread" with Daniel Day-Lewis. There is a cool scene where he orders breakfast and asks for a long list of goodies, including Welsh Rarebit. I had heard of it, but never made it. He had no clue what it was, but from then on kept asking for it in a joking way. Then, one morning I pulled out my Fanny Farmer Cookbook and found a recipe for it and surprised him with it. He had no clue what was sitting in front of him. Needless the say, he did love it. I should make it again soon.

@Soupe du jour when I was little I used to misread Welsh rarebit as Welsh rabbit glad your husband enjoyed it! I like that movie btw.

Yes very much a variation, original haggis has chopped offal (heart lungs etc) and I’m afraid I’m not a fan, I was vegetarian until recently and still not a fan of offal. Veggie version’s pretty tasty though, used green lentils.

Lentils are wonderful. I love to cook with them, too.

Like you, I'm not a big fan of offal. Most Americans aren't, other than maybe the much older folks. In Czech Republic, it's still pretty popular. One of the most common restaurant soups contains liver dumplings. Czechs also like sausages and other meat products with all kinds of stuff in it. There is also a popular goulash that translates to "Slaughter Day Goulash" that has pretty much all of the offals they have to use. And tripe soup is common.

Yeah I was a vegetarian until menopause then I had very strong cravings for meat, but still no to offal. Still I choose fish over other meat most often, but strangely I love jerky. I can only afford it a couple times of years, cause yikes real jerky is expensive.

I wish I could cook and bake for you, too, Nammu.

You can at least see the Bishop's Bread at Biskupsky Chlebiček (Bishop’s Bread) – Bird Flight but I know that's not very satisfying. It's a little unique, especially how my mother-in-law made it.

Lol 😂 slaughter day goulash! That sounds like something my father’s family would have loved. They were farmers and my grandparents immigrated from Norway.

I usually always bake my salmon, unless I'm making something like a Teriyaki salmon preparation.

I agree that baking it makes it nice and sometimes slightly crunchy on top.

I like wild rice too, but we only have the mix here too and only in big stores, mostly I get basmati.

Oh that goulash sounds My husband worked in the Czech Republic many years ago and he said he liked kledniky (is that right? Dumplings?)

Oh that’s interesting @Nammu that your grandparents came from Norway, do you still like special dishes from there?

Cat food with wild rice?! How unusual. I don’t think my guy would like that. He doesn’t do human food. Since I’m in Minnesota I can get straight wild rice but yes it’s mostly mixed with other stuff.

Oh how nice it would be nice to live where people love pets. Funnily Texas was more pet friendly than Minnesota.

Lefse is huge here to a lesser degree is lutefisk. It’s a big deal at Christmas time. But there’s all sorts of cookies that have the old world bases. Mum is 100% German but we don’t have much in a German menu, though my grandfather made homemade souerkraut. My father wasn’t a fan so it didn’t get made. It was far superior to the canned stuff mum would buy.
