Spaghetti Cacio & Pepe and a wedge salad with cherry tomato halves and yellow bell pepper with homemade Roquefort salad dressing. It was good, except the pan I mixed the pasta dish in was hard to clean afterwards.

So, in this country, on the 29th of each month you are supposed to eat gnocchi. We were out of eggs to make the gnocchi and were going to go buy some when it hit me that the leftover dumplings are essentially gnocchi, just bigger. So. I cut them up in gnocchi-sized pieces. Then, I sautéed some red pepper, zucchini, garlic and onion in olive oil, added the leftover shredded beef, and then tossed in some cream to make a sauce to put over the substitute gnocchi. I guess it was German/Italian fusion. It came out surprisingly well.

Today I plan to make an authentic hovězi guláš (beef goulash) and invite our friend/renovator to dinner. The dumplings I confess are store bought, though I do know how to make them and have made them many times. I'm a little nervous because the meal is in reaction the friend telling Hubby that he hasn't had a good guláš in ages. So it better be good! There are many types of guláš, but the basic beef one is the classic. This is surely the one he was thinking about.

Also plan to make homemade jablečný závin (apple strudel) using a puff pastry crust.

Yesterday I made a fully homemade turkey veggie noodle soup. Also, for lunch, spinach quesadillas and homemade guacamole to go with it. All tasted very good. For breakfast I ate a homemade banana nut muffin with sugared roasted walnuts on top. Our renovator friend said he ate all three I gave him in one sitting. He has always liked my sweet breads.

This afternoon I made a turkey Waldorf salad with leftover excess turkey meat. So yummy! I pan toasted the walnuts before adding them. Turkey legs are such a great deal.

Coming back to revive this thread rather than start a new one.

This morning I made focaccia and leek and potato soup, both of which are surprisingly easy.

I know everyone is on low carb eating these days but I’m enjoying making bread a couple of times a week, the making of it is so therapeutic and it means less highly processed food.

I’ve been experimenting making a sourdough starter, never done this before but read up online. Unfortunately mines been going over a week and no sign of the frothing up with fermentation so not ready. I think it’s been too cold probably.

They do the gnocchi on the 29th tradition in Argentina too. I like them when my husband makes them, but I find the store bought ones too doughy.

Argentina has a new president and he's been reducing the public workforce. It's not popular, but really needs to be done. So, there have been protests against this. I noticed that some people were using the term gnocchi to refer to useless public employees. I asked someone I know in Argentina about that. The nickname comes from the 29th gnocchi tradition because a lot of those employees don't even show up to work. They only appear at the end of the month to get paid!

Made pumpkin soup the other day with the pie pumpkin puree I made. So yummy.

Then I made some chili for over hot dogs....but haven't used my organic hot dogs for it yet. Delicious by itself.

Today I made Chicken Tortilla soup....another delicious meal. I have enough left overs now to last me awhile.

Going to made a sweet onion casserole with mushrooms & marsala wine. Haven't been cooking for awhile so gotta use up things before they spoil
