Yesterday, I made an Asian-style ground chicken stir fry with rice and baked some homemade blueberry muffins.

I know everyone is on low carb eating these days but I’m enjoying making bread a couple of times a week, the making of it is so therapeutic and it means less highly processed food.

I’ve been experimenting making a sourdough starter, never done this before but read up online. Unfortunately mines been going over a week and no sign of the frothing up with fermentation so not ready. I think it’s been too cold probably.
I forgot to update this, I think it took about 11 days for my sourdough starter dough to ferment, I began using heat pads and put it on the radiator also I switched to whole meal flour when feeding it. Since then I’ve made 3 loaves from it really nice quality although it does go stale next day if I don’t freeze it.

Thai beef salad ... and it was delicious ... except I only had to put the ingredients from 2 different bowls together (part of my healthy eating plan).

Mine, too @divine1966. And my son's. And my American cousin's husband's. It is a favorite all around!

My secret is using a whole pound of split peas when I make it.

I have bought a cast iron skillet to help boost my iron reserves. I am now cooking ground beef and beans chili with canned tomatoes and tomato sauce in it. Apparently, the acidity of tomatoes boosts iron absorption and even draws some iron from the skillet into the dish. We will see how it comes out. I have been cooking it slowly over low heat for over 3 hours!

Roast beef in the slow cooker today, melts away after 6 or 7 hours.

I made banana nut chocolate chip muffins to use a couple black bananas. They're quite good. I ate one. Also, I made an herby cauliflower chickpea salad with lemon vinaigrette and pickled red onions. All of herbs were from my outdoor garden. I used a mix of lovage, parsley, chives and mint. The latter needs to marinade for a while.

For breakfast we had slices of low fat apple cake that I made a couple days ago.
