That's good that your husband liked knedlíky. They are a major part of the Czech culinary tradition, particularly the savory sliced types and the sweet fruit filled ones. I will say that nowadays potato-based sides (especially French fries) seem more frequently offered here (not that they weren't in the past), as well as rice, to a lesser degree. Czechs eat a wider variety of foods from other countries, than they did in the past. I'm glad.

Nammu, the wild rice in the cat food I mentioned is part of a meat mix that also has vegetable product in it. I doubt the kitties eating it know there is wild rice.

After thinking about it I should say that lutefisk is an American Norwegian food. They don’t have it in Norway. They needed a way to get the Norwegian fish to the middle USA and preserved it in lard. By the time it arrived it was a jelly like mess. But they used it anyway and it became a tradition. Here in the middle of north America there’s not much of the coastal traditional stuff to be had. But the baked goods have been handed down.

I had Hors D’oeuvres tonight. Some kind of a sausage wrapped in bacon was new, but the rest pretty basic meat and cheese, bread, crackers and a hot dip that was good. Dessert was good, cream puffs and a mini cheesecake with a raspberry on top. Complete bar but I didn’t feel like drinking so I had a soda.

For lunch, I made avocado toasts. They were very yummy! Right now I'm in the midst of making homemade celeriac and celery stalk soup. Right before, I made simple homemade croutons. For dinner, we'll eat the celery soup, plus I'm making skillet spiced pork chops (spices include chili powder, onion powder, smoked paprika, and salt/pepper). The pork chops will have a pan sauce made which will include chicken broth, apple cider vinegar, honey, flour and spice residue (left from the pork searing).

I’m going to make salmon tonight, I’m planning on seasoning with lemon zest and juice and oven baking, I’m also planning on roasting some baby potatoes with herbs (just dried mixed ones) and maybe roasting the broccoli and carrots too. I think I’ll make a fruit crumble while the oven’s being used, super easy, frozen summer berries, oats, sugar and butter.

I’m using a lot of meals I froze over last few weeks, I normally make double of whatever and then freeze half. Sweet and sour chicken tonight with rice.

For dinner, I pan seared steak and served it topped with a gorgonzola cheese-butter-shallot spread I created, along with herbed roasted potatoes and a nice salad of Belgian endive leaves, sliced radishes, and sliced fennel bulb with an orange vinaigrette also containing parsley, chives, and tarragon.

Made homemade pizza (found a great crust recipe), with a homemade pork sausage and portobello mushroom topping (+traditional tomato sauce and mozzarella). It was tasty!

The last thing I cooked was chicken breast cutlets with a special basil cream sauce. I served it with white rice and a medley of veggies.

Tonight I plan to make a roasted vegetable tart. It's a baked puff pastry sheet topped with a mix of ricotta and feta cheeses and herbs, then topped with roasted vegetables and baked a little longer. Tonight I'll probably roast some orange and yellow carrots, parsley root, red onion, and zucchini for the top. I vary the vegetables according to my mood or what I have available. Ratatouille veggies (minus tomato) are also good on this tart. I top it with more fresh herbs and a drizzle of balsamic cream. I'll serve it with mixed olives and cherry tomatoes on the side.
