Yesterday I baked a chocolate banana nut brownie cake. It's good, but confess that the banana flavor dominates. I also made a tagliatelle dish with lots of crispy caramelized onion, lentils, and tons of parsley. It was yummy, as always. A dish my husband particularly likes.
Today I plan to make an Asian-inspired meal. I'll make salmon tartare and an avocado salad. With it I will serve quick packaged miso soup and store-bought baked vegetable spring rolls. __________________ Dx: Bipolar type 1 Psych Medications: * Tegretol XR (carbamazepine ER) 800 mg * Lamictal (lamotrigine) 150 mg * Seroquel XR (quetiapine ER) 600 mg I also take meds for blood pressure, cholesterol, and tachycardia. |

We're having leftovers, but I did cook dinner last night. I made salmon with a pecan, chopped parsley, and panko crust held on by a glaze of Dijon mustard, honey, and a little melted butter. Quite good. I will definitely make it again in the future.

Fake vegetable meatballs: red salad (radish), leeks, smashed potato, egg, parmesan cheese, breadcrumbs, pinch of salt and a bit of olive oil
But like, very messy, fast version |

We had a barbecue on Saturday, so on Sunday we used the leftovers to make some tacos with homemade guacamole and chipotle cream sauce.

I made an amazing pot roast with carrots, celery, sweet peppers, shitaki mushrooms in a bourbon gravy. Lots of spices to season. That gave me dinners I didn't have to cook while recovering from bronchitis & strep. Finished it up last night.
Going to make stir fry venison tenderloin tonight. Probably add in some adobo seasoning. Lol....used to have leftovers lost in my refrig until I cleaned it & reorganized it this last winter. The raccoons loved it when I did that....now they don't get so many treats __________________ Leo's favorite place was in the passenger seat of my truck. We went everywhere together like this. I’ve been making some nice Mediterranean inspired dishes this weekend, the weather’s warmer and it’s nice to eat lighter.
Today I made salmon with paprika, oregano, black pepper and lemon zest marinade. With quinoa with lemon and cumin, and roasted vegetables. |

Dinner tonight is a cardiologists nightmare but tastes fantastic! Pan fried catfish, breaded okra (done in air fryer) and pan fried potatoes O'Brian. YUMMMMMM!

I made some homemade peach cobbler yesterday. A friend told me to add a TSP of vanilla and cinnamon and wow, that made an incredible difference. Sitting here eating a bowl with some ice cream.

Not cooking now, but when my kitchen is FINALLY ready enough to properly move into (set up), first thing will be chili con carne with all of the fixings, plus corn muffins.

Chicken tenders -----> I brush the meat with extra-virgin olive oil, then sprinkle seasonings that comes in a small box (rosemary, oregano, sage, ginger, marjoram, thyme, and pepper), black pepper (from crushed peppercorns), and a dash of salt. Then I coat with ground-up corn flakes. I'll have the chicken with black beans (sprinkled with chili powder) and raw carrots.
