Okay, so I'm sure most of us aren't actual chefs, but I get a sort of accomplished feeling from cooking that makes my evening just feel more relaxing. Like I did something worthwhile.
So, what did you all cook recently/tonight/yesterday or whatever? I'll start. Tonight I'm just finishing a new meatloaf recipe that looks and smells like it's coming out as a winner. New sauce and later than I usually put it. Melded really well. I'm excited to try it. Sides of Instant Mash and Instant gravy. I can make them normally, I just didn't have the ingredients or the patience. How about you? |

found a recipe sounded good for beef taco sliders so made it for potluck at work last week.. meat was good but had no taco taste to it.. putting it on hawaiian buns like it called for was a big mistake cuz they turned into blobs of mushy of messes... i was not impressed & wont make it again ..
one of the other dishes at the potluck was a real good jalapeno popper dip so got the recipe & made it along with a cheesy hash brown casserole & took those with me to our family get together on Christmas Eve .. |

Hi Mingo, and welcome to the Support Forums!
I whipped up a very tasty tuna casserole. I used portobello mushrooms instead of white button, and toned-down the amount of onion I normally chop up for it. It turned out really extra tasty. I even got a compliment on it, which is unusual for a standard, weeknight recipe. |

i knew better then to use Hawaiian buns mainly because i dont really like them all that much & i even had slider size pretzle bun in my cart until i decided it might be a better idea just to use the ones the recipe called for instead.
other then having no taco taste to it i thought the meat was pretty good. while i the buns ready to put the filling on them the thought crossed my mind that they almost seemed "too fresh" somehow to me.. they just cut gumpy and kinda compacted as i was handeling them.... i dont know what the problem was with them turning out like they did. i only had 1 cup of broth in with the meat & it cooked in a covered dutch oven on 350 for about 4 hrs so it was a lot more dry then it was wet... less wet then say your normal type bbq pulled pork sandawich or a sloppy joe would be. to me.. they would have turned out better to have just used slices out of a loaf of white sandwich bread simply because after the bread would have turned to mush the crust would have still been there. haha. i dont try new recipies very often but sometimes i will because i just get tired of having the same ol things day after day ..... |

I've been away from my house on vacation, so haven't cooked since we left. I'm a very enthusiastic home cook/baker, though. I brought my homemade vanilla crescent Christmas cookies on my trip for friends and family. They were a hit.

On Christmas Day I made egg custard pies for the first time, they came out pretty good. Not perfect but pretty good considering I’ve never made them before. Trying to get better at baking and making desserts

On Christmas Day I made latkes because it was also last night of Hanukkah. I have to admit I cooked nothing major since then. Yesterday we did major IKEA run and ate their meatballs.

My husband loves IKEA meatballs- not been there is years, did you get the lingonberry jam with them?
Tonight I’ve made a chestnut, mushroom and ale pie - it’s a veganuary recipe although my pastry isn’t vegan as it’s got butter and egg in. Not eaten it yet but it smells nice (there’s thyme, rosemary and garlic in there) could’ve done with more gravy though so I’m just mixing up some instant, broccoli, peas, carrots and mashed potatoes to go with it. Comfort food is my favourite. |

Tonight I made cornbread and nuked the last of the turkey and had cranberry relish from the store. That’s about how I roll, easy meals. I opted out of cooked veggies cause mum rarely eats them and I don’t want more leftovers.

The chestnut and mushroom ale pie was really good but like I said needed more gravy so would add more stock next time, it was a nice rich gravy though.
Tonight I’m reheating a defrosted chickpea, sweet potato and spinach curry so nice and easy, just rice to cook and might make some chapatti to go with that (those are very easy to make). Nammu I think left over Turkey is nicer than the actual Christmas dinner, especially with cranberry. How do you make cornbread? I like the sound of that. |

Me, I buy the box mixes and just add liquids and egg. I tend to buy the more expensive brands as there’s definitely a difference. But sometimes the cheep ones are on sale for .29 cents and that’s hard to pass up. If I have shredded cheese on hand I can add that and some cayenne pepper to pep it up. I’m not a from scratch person.

I made a really terrible quesadilla and a really good grilled cheese. I accidentally bought corn tortilla which does not work and my bag of shredded cheese was moldy so all I had was sliced cheese. But my grilled cheese was everything I hoped for.

I made a proper Sunday chicken dinner tonight, with lots of veg and Yorkshire puddings and roast potatoes. Did extra veg so we can have left overs for bubble and squeak in a few days too.
Do others have a special meal they traditionally make on Sunday? |

i made split pea soup yesterday... the grocery store had packs of ham "soup bone scraps" so threw them in a pot with the dried split peas, some carrots, celery & garlic, added some vege stock - brought it to a boil then let it simmer until the peas got tender. wasnt bad but wasnt as good as my ex sister in use to make tho.
