MD, never personally tried boiled peanuts in a can. Did try fresh boiled peanuts once. Didn't like the taste or texture. I like the crunchiness of roasted peanuts. The boiled ones were kind of mushy. Given that canned vegetables are mushy I would guess canned peanuts are too. If someone offered me a taste I'd probably try them (am an adventurous eater) but not going to run out and buy some. Based on my experience with fresh boiled peanuts I suspect they are yucky.

"Boiled peanuts contain fewer calories than raw or roasted peanuts, with around 116 calories per 1/4 cup (146 grams), compared with 207 and 214 calories for raw and roasted peanuts, respectively.

However, boiled peanuts contain 50% less fat than raw and roasted peanuts, meaning they may not have the same filling effect. Therefore, choose the type you like the best and always be mindful of your portion sizes."
