I have lots of medical issues, including diabetes - and all of the medical professionals I deal with have different thoughts about nutrition.

I'd actually like to go back to school and study nutrition - but I wouldn't know how to find a good school. It's a subject I'm curious about.

You can find books on health and nutrition isle at Barnes and nobles, or the medical books there are some pages on nutritional ed for diabetes. ALso ChooseMyPlate.gov

I'm curious what are those subjects about? Are they opinion based?

I'm not sure about the school but maybe you can check if the teacher is board licensed / certified

I'd recommend that you see a nutritionist. A nutritionist that has complete access to your records and doctors would certainly be the best shot.
