Instructions:

In a med. bowl, sift together flour, 3 T sugar, and salt. work in shortening or butter with a pastry blender until it forms coarse crumbs. In a cup, whisk egg and cold water, drip over flour mixture and work with hands until a dough forms. Put in fridge for 30 mins.

Preheat oven to 350 F. Roll out dough to 1/8 inch thickness and place at bottom and halfway up sides of 9 x 13 baking dish. Bake for 20 mins. or until golden brown.

Mix peaches, lemon juice, and OJ in large saucepan. Add 1/2 cup butter. Mix 2 cups sugar, cornstarch, nutmeg, and cinnamon in bowl. Once butter is melted, add sugar mixture. Remove from heat and pour into crust.

It isn't very pretty, my lattice is messy and I only had this nana bread pan. The ex has all my kitchen stuff for the girls. Anyway, it tastes good.

I'm going to try making these lemon bars in a couple weeks. For a summery dessert. I'll definitely give some to my sister for her to bring home to share with my niece and brother-in-law. That's the good thing about having family to share stuff with, I can just have her pick up stuff I make and I don't have to have unnecessary leftovers at home tempting me

Overnight Ham and Egg Casserole Recipe | Taste of Home

Anyone know what section of the grocery store I'd find cubed ham in?

Mashed potato pancakes

Take leftover mashed potatoes
Form into thin patties
dip patty into egg
dip egg covered patty into flour
put on skillet sprayed with pam,
cook until heated/browned then flip and cook the other side

Great with sour cream and green onions.

Or with Eggs and cheese for breakfast.
