Last night I saw myself in a dream, I was both the version of self I was seeing, and a seperate consciousness, as if I were observing myself out of body. I was seated on a bench, waiting for something, and was missing my left eye, there was just a gaping hole where it should have been.

That's all there was to it...but it was a little unsettling

It could mean that you are worried about something going on in your life. I don't think it is anything detrimental.

To see oneself bodiless, feeling unrecognized, unnoticed.
To see a bench represents procrastination.
To wait:looking for cues
Loss of sight in left eye:not seeing what you are really feeling or thinking, not aware of self, motives, behavior, no 'insight'.

You feel you are not seeing with an creative eye. Just a blank hole where your creativity should be.
