There are no easy solutions, but here are a couple technology work arounds to include your mother.
A live Skype conversation between your mother and her grandchild. So both would need to have the latest version of Skype operational since Microsoft took over Skype - try testing Skype out a couple days before to make sure it works. Have your mother on the phone the day of the party and set up Skype and test it then, then leave it on until the time for sharing.
If that is not possible have someone take movies with their digital camera or cell phone. Make sure you have cables to download to your laptop or take your mother the phone and show her as soon as you can.
That is one way your mother could participate.
