I guess hearing, but only if I lost it at my current age, not younger. I would be able to make my own music or play remembered music in my head. I have an excellent memory for music. If I learned sign language, I could speak a loved one's words as they wrote, signed, or spoke them (lip reading)? A breeze against my cheek would be heard. A flag banging against a pole would be heard. Music's vibration/booming would be heard.

Losing the sense of smell can affect the sense of taste. Not enjoying food would be awful. Losing feeling or sight would be more disabling, for me, than losing hearing.
