I don't want to hit anyone, other than myself. Well, not entirely true, I fanaticize about hitting someone (no one in particular).

I get worked up (surprise), but it happens every day when meds wear down, which is when I have to deal with kids coming home from school and starting my chaos, getting ready for wife to come home from work (I "work" but I'm mostly useless), dinner, thinking about how much of a pain getting kids to bed will be (11 y.o. son w/ ADHD & G.A.D. too)
...

What can I do to deal with it when it's happening? Exercise doesn't help before they come home - feel good right up until kids are home and demanding attention and homework help. (BTW - they teach things much differently than 30 yrs. ago)

I don't want to get pissed every day but it happens. How do I deal with going from peace to my chaos without losing it every day? (Working with a T but just started).

I'm sure there are others here who can give better advice. I can give you tips from my own experiences though. You have a bit of an advantage in dealing with this situation because you know exactly when the chaos will start, and pretty much what it will contain.
Take about twenty minutes for yourself before the wife and kids get home. Use some of that time to clear your head and calm and focus your emotions. Use the rest of the time to mentally prepare yourself. You know it will be exhausting, but you also know you will get through it.
While it's happening you can still take a moment for yourself. Retreat to another room. Breathe, calm down. Even five minutes can make a big difference. Explain this to your wife and offer her a moment when she seems stressed. Maybe come up with a plan or schedule together for your evenings. Schedules can make transitions easier for you and the kids. Good luck.

Lostinbooks has some great ideas. Predictable schedules are helpful.

We all have that golden moment of decision, when we are angry and want to lash out but we can go either way - give in to the anger or let it go. Hopefully you and your therapist can work on strengthening that.

Adderall can be dosed in the afternoon with a short-acting dose to help with evening mood. If you aren't already doing that you might consider talking to your doc about it.

Just some thoughts ...

Yeah, we're working on calming me down. T gave me the deep relaxation/imagery stuff last appt. to work on. Next appt. is tomorrow. Guess how much I did? You know the answer. Needs to give it to me in writing and watch me put it into my phone calendar.

I take Adderall IR specifically to control the dose. I have a thread in here somewhere about if others find it loses effectiveness in the p.m. I'm good from the a.m. until about 3:30 p.m., then another dose just doesn't seems to work.

P-doc knows I think I'm on the wrong ADHD med but we're working on the G.A.D. and Depression for now. I see him Tues. and will probably ask about trying Concerta or Ritalin soon since the BuSpar seems to be helping. Or here's a crazy idea, maybe I'll ask about stopping the stims altogether for now and seeing what happens to the Anxiety? Then again, I can do that myself anytime.
