It seems like when I'm super nervous or worried, my mind gets fixated on swallowing every couple of seconds. I don't know why, and I haven't brought it up to my therapist yet because I don't want her to think I'm making it up. Has anyone else experienced this? It's quite embarrassing, especially in public.

Yes I have this. Sometimes my throat will get soar from being anxious too much all day. I try to use CBT type skills to reduce the swallowing. You should tell your T if possible

Are you taking any meds? If so, it could be a side-effect.

Also because anxiety itself dries the mouth and throat out
