Check out Throwing Muses' early stuff. Kristin's bipolarity wormed its way into many of their songs, especially on "Hunkpapa." Some songs: "Mania", "No Parachutes," "Devil's Roof", and I personally think "Fall Down" is referencing depression.

Matchbox 20 "unwell" comes to mind. It doesn't say specifically bipolar but the lyrics are obviously at least to me mental health related. I may be wrong but.... Just my 2 cents.
