My bipolar disorder is a disability that the school cannot discriminate against me for having. If the school receives written reassurance from my psychiatrist, psychotherapist, and psychologist that my bipolar disorder is being adequately managed and that I do not present a danger to myself or others, shouldn't that be sufficient?

Again, we really can't answer that question. We aren't lawyers nor do we know all of the details of the situation from all perspectives, so really, this will have to be something taken before the school, hopefully with legal assistance, and hashed out there.
