I want to stay up as late as I can so I can sleep in as long as possible tomorrow because my moods and anticipatory anxiety have been so bad these last couple days.
Is that a form of mania even though I want to sleep just not right away?

I don't know about the sleep, but it's becoming more obvious that BD often includes severe anxiety that may be a dysphoric episode.

Sometimes I don't want to sleep because I don't want the next day to come. Maybe things are stressful at work and I can't bear the thought of facing the stress. Or being alive seems like too much trouble. It's very weird. That's when I stay up until 3 a.m. even though I know that's not good for bipolar. Sometimes I'm manic when my sleep is like this, other times not.

Sometimes being alive seems like too much to bear....
tbh what the OP described doesn't sound like mania to me.
