To be more specific; when are confronted and asked how we're doing (I mean they know something's up), why do we say stuff like, "I'm fine", "Just a little stressed" or "I'm good. How are you?" (just abruptly change the subject)?

It would vary between people I imagine... It could me multiple things, however I think the main ones are:
Stigma and social "norms". The vulnerable feeling if someone knows.. For me ? It's easier for me not to say it as I actually feel more stressed and anxious if more people know how I actually feel ! It's a very private thing for me.

I don't know about you, but I am very, very, specific about who knows the "true" me.. everyone else see's me as a happy person with no worries !

Unfortunately I agree with the above, there is still plenty of stigma and misinformation regarding depression and other mental health issues... I too have used the line "a little stressed" or something similar. It stinks to be open and vulnerable and then be judged.. Often few people are worthy of our trust

Because most often when asked they don't really care or want to know. All they want to hear is "I'm fine."
