Okay I could use some help.
I am a full-time student plus work a full-time job on top of being married and having a house to take care of. I am trying to be proactive in my staying organized and "with-it" during this semester. Does anybody have any good dinner tips that are easy, quick, and healthy that I can cook when I get home from class? Thanks!! |

Crockpots are amazing for this, I make a batch of chili, creole, or other crockpot meals and use it through the week to save time and stress

Making double portion to cover two days saves time. It does not take much longer to cook more, and next day you are just reheating.
Same applies to veggies. When making salad, wash your greens, clean veggies, chop (except tomatos or avocados), and store half loosely in a large locked container in a fridge, or a bowl sealed with plastic wrap, without any dressing of course. Next day instant salad. Other salad time savers, like buying ready to eat mixed greens ies also work, but you pay for convenience, and often they are less fresh and less diverse than your previous day pre-washed, pre-chopped ones. One of the best things you can do for your and your family's health is daily green salad. Soups you can make huge pot at a time, and it can be simmering in the evening while you relax or study. The best advice to save time is planning. Buy for what you will cook. Cook for several days. Cook when you have time. Don't rush home, open a fridge and stare wondering what to make real quick now - that path leads to needless stress, discouragement and microwavable plastic food. |

Fully agree with the above points about making double.
Also the BBC recipe site lets you search for 'Quick and Easy' recipes, that (it says) take less than 30 mins to prepare. http://www.bbc.co.uk/food/recipes/#quick-recipe-finder |

Crock pot and bread machine are a busy mom's best friends! Many things are just as good or better after frozen. Nothing easier that pulling a bag of red sauce out of the freezer and boiling it as you boil the pasta. Throw in a salad a nice loaf of bread and a meal fit for a king.
I over cook pork and chicken. I have all my life. But in a nesco it is cooked perfectly. Well done yet juicy. Soups are delicious frozen. That way you're not eating the same thing several days in a row. When my kids were small I planned my meals in advance. We shopped for a month at a time, only stopping to get fresh eggs in between. (Milk freezes well also). It was so satisfying to come home after a long day to have a wonderful home cooked meal waiting for me. It really did only take a few extra minutes in the morning.
