Salmon and squash sounds good. I don't think I have any salmon but I have some canned tuna and I can make a tuna patty. I like those.

Subs and chips; it's too hot again to even think of turning the oven on, and I didn't think far ahead enough to prepare a crock pot or stovetop meal.

We have a single friend who wanders over once or twice a week and I try to have enough so he can stay for dinner if he likes. But he often decides not to and I'm "stuck" with too much meat thawed, etc. I have a couple options for tonight; one he could participate in and one that would only serve my husband and myself. The "other" happens tomorrow night. Wednesday is "date night" so we go out.

Fresh veggies and dip -- and maybe a piece of spinach-and-mushroom pizza if I give in to my craving

Have you ever tried Chef Paul Prudohmes pork and veal magic. It IS FANTASTIC, just sprinkle some in the pan and on the chop cook till the fat rolls of with a fork, nice and brown. I used to cook a six pack of chops enuff for 3 meals but they always would call to me late at night and end up a midnight snack...LOL

We had steak on the grill (done perfectly rare by yours truly), corn on the cob, sauteed onions and garlic cloves, and cheddar pierogies. It was awesome!
