I bought myself a bread machine for my birthday. I follow the directions to the letter and the top of the loaf collapses on me.

Has anyone else had this problem? What am I doing wrong? Too much yeast? Too dry?

Yesh that often happens to me usually when the loath is a large one I don't know why and out sti"l rates good.

I used fresh ingredients. The third rise was quite large. I won't know what happened until I cut it open.

This has happened before. I don't know how to correct it.

Smells great, as usual. Wonder how it will taste.

Opened it up. It was on the moist side, so more flour, I guess.

Hmm, maybe the bread maker is faulty? Have you tried calling the help line for the machine/brand?

Oh yes, it's happened to me also. It's not just you. My mother had one growing up. Now I've wished Santa would bring me one! I love fresh bread! Especially sourdough!!!!!!!

Do the bread makers that are out now have to have the ingredients put in in a specific order? They used to. Like my aunt gave us her old one many years ago & we had to add ingredients in the opposite order they were listed in the book. I'm guessing modern bread makers don't have this issue, but wondered if that could be the problem.

I really need to get my breadmaker out & pick up the ingredients.

You might try putting your dry ingediants in first (do not mix them) then you make a nest and put your egg and milk in the nest, not allowing the fluids to touch the inside of the pan. Works for me, anyway.

You got me curious so I had a bit of a google and found this:

Bread collapses during baking:
  • Use a thermometer to accurately measure the liquid temperature.
  • Use less liquid
  • Increase the amount of salt
  • Too much yeast was added
  • During periods of warm weather with high humidity, use less water and cooler water.
I guess if you are following the recipe then it probably won't be to do with salt or yeast. Maybe the temperature of the water and the amount might need to be adjusted for your climate?


I love fresh bread, too. Yum.
