Here's one for "Southern" mac and cheese. I found this on a recipe website for just macaroni and cheese recipes. I'm going to try to copy and share others.

Southern Macaroni and Cheese Recipe

Southern baked macaroni and cheese has always been a favorite at my house for family dinners. I have also used this recipe for a main course and served it with fresh vegetables and fruit. It's always a winner with the kids.
The southern mac and cheese can be made without the bread crumbs also. Chopped ham or other meats and vegetables could be added to the baked macaroni and cheese recipe to make a complete meal in one dish. Why not try adding cooked hamburger meat, cooked ground turkey or sausage, bell peppers, chopped broccoli or carrots.

Southern Macaroni and Cheese Ingredients
8oz elbow macaroni, cooked and drained
1 cup grated sharp cheddar cheese
3 Tablespoons butter, chopped
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 large egg
1/2 cup 2% milk
1/2 cup bread crumbs
additional 3 Tablespoons butter
Directions for Baked Macaroni and Cheese
Layer macaroni, cheese, chopped butter, salt and pepper in a baking dish. Reserve some of the cheese for the top of the macaroni and cheese.
Mix milk and egg together. Pour over the macaroni layers.
Melt the additional 3 tablespoons of butter and combine with the bread crumbs. Spread the buttered bread crumbs over the top of the macaroni and cheese.
Bake at 350 degrees for approximately 30 minutes, or until the egg and milk are thoroughly cooked and the top is brown.

I like this recipe because it is easy and it tastes so good.

Creamy Macaroni and Cheese

1(12 once) package of macaroni
6 tbsp(3/4 stick) margarine
1/4 cup flour
2 cups milk
1 lb velveeta cheese, cubed
1 tsp salt
1/2 tsp pepper

1. Cook macaroni according to package directions and drain.
2. Melt Margarine in saucepan and stir in flour until well blended.
3. Slowly add milk stirring constantly and heat until it begins to thicken. Add cheese and stir until cheese melts.
4. Pour cheese sauce over macaroni and mix well.
5. Pour into buttered 2 1/2 quart baking dish. Bake covered at 350 degrees for 30 minutes or until bubbly

Here's one from Tillamook's site. They make a high quality absolutely wonderful cheese!

I have a recipe that uses Tillamook cheddar and cottage cheese that you puree, but I never had the exact measurements and it hasn't turned out well in my attempts so I won't print that one, but the Tillamook is such a good cheese that I will print this one
