So there's this guy I like. It's obvious that he likes me, but I'm not sure how to move forward. I've made friends, and I've briefly explained it to them, but I haven't actually told them about any of my mental health issues. It's getting hard to avoid the topic and I REALLY want to tell them, but I don't want to scare them away. So my question is: How do I warn a guy about what he's getting himself into? I hate to say it but I'm a little high-maintenance. Should I spill the beans all at once? Or reveal it piece by piece?

There's no right or wrong answer to your question; because the response isn't a one size fits all.

This is just what I personally did.

I would say it was just before the 2 month mark in my relationship with my bf where I realised things could get quite serious (relationship wise) that I told him I'm bipolar. I didn't want him to make a judgement on me beforehand when he could get to know me a little bit; and I didn't want to tell him at the last hour either.

Sounds like you need a little more than "like" at this stage to spill the beans. I'd wait a little while and see if anything develops from your relationship.

I agree that there's no right or wrong here. Perhaps maybe reveal a little bit, and if it starts to get serious then tell him everything? It would be a hard thing to tell someone that you don't know quite well yet. It's really up to you and what you feel comfortable with.
