I am "doing alright" at the one day at a time not hurting myself thing. Just when something big or really stressful comes along it almost gives me an excuse to cut. My wife says it seems like I am not actually planning on quitting forever. She says I don't have a plan on how I am going to quit in times of big stress or forever. She's right. How do I not hurt myself when something big comes along?! I'm worried I'm just distracting myself for so long and I'm not making any significant changes or significant progress. Can anyone relate? What can I do?

I would recommend making a plan. A detailed plan. Writing everything down. Here is some of my list.

Things to do when major trauma strikes.

Remove yourself from the situation.
Call someone. (Have a list of people to call)
Read a book, or listen to a book.
Listen to Music. Something calming.
Go for a walk, a jog.
Go to a Coffeeshop, a Library. Someplace with people.
Watch TV.
Take a shower (Hot or Cold, Some Doctors say a cold shower is better)
A Hot Bath to relax.
Call or text a Hotline to talk to someone. (Shut off your GPS if you don't want them to trace you.)
Get on Psych Central and Post. (I use to go to a different forum.) Don't sugar coat it. Say what you are feeling (within the rules) and that you want to talk to someone.
Enter the chat rooms and ask if someone will do a private chat with you or talk to the group.

If you do nothing the habit gets fixed and cutting is what you will do. You must find a way to create safe space.

You may want to download the app Calm Harm. (it's free) It lists several alternative things to do when you have urges to hurt yourself in different categories (Comfort, Distract, Express Yourself, Release, Breathe).
