Friends,

I'm proud of myself for having a good breakfast. I made two boiled eggs, and enjoyed them with a little horse radish sauce and lemon pepper.

What did everybody else have? Self Care

Wow! Horseradish on the eggs. Never thought of that one. Of course, I don't care for horseradish so perhaps that's why? LOL

We had to go out early so we went to a diner. I wanted to order some "grain" dish; waffles, pancakes, something like that because I've been eating too many eggs (everyday) but I ordered a veggie omelette. That entertained me and got me thinking because I was thinking about how peanuts aren't "nuts" and this veggie omelette was full of mushrooms . . . who decided those were vegetables? Self Care

Hi Perna,

The horseradish sauce I think has a mayonnaise base.

Your veggie omelette sounds yummy. I love mushrooms -- whatever they are!

I don't mind mushrooms in omelettes, on pizza, etc. but prefer them cooked to raw and don't like too many. I cook with cream of mushroom soup though and don't mind gravy with mushrooms, etc. but this omelette was pink tomatoes (very out of season, tasteless, just adding too much liquid to the omelette), green bell pepper, onion and then too many mushrooms. I like some egg in my omelette :-) and there were more mushrooms than egg. The waitress asked did I want cheese but my husband makes us breakfast each morning and invariably makes us ham and cheese omelettes or ham, egg, and cheese "sandwiches". I get tired of too much cheese too or cheese too often. He likes "American" and not anything "interesting" so that's not much fun. But it's very hard to criticize a man who brings you breakfast he's made you when you're sitting in an easy chair with the coffee, which often he also brought you earlier, and playing on the computer :-) I can make suggestions, request French toast or pancakes sometimes but he much prefers the egg dishes. The only way I can get away from them is to feed myself before he makes breakfast; he doesn't like to eat first thing, usually not until around 10:30-11:00 so if I'm up early I'll eat something "healthy" :-) and tell him I've eaten. It gets really bad when we run out of bacon or ham or sausage and he starts making hot dog omelettes, LOL.

WOW, Perna! Sounds like hubby needs to have his cholesterol checked!

You don't need to make it sound like a criticism when you ask him to fix something else besides eggs. Tell him it would be "better for his health" and yours, if he fixed something other than cholesterol laden foods! Self Care

Are you saying the mushrooms on your omelet were not cooked? I only like cooked mushrooms too.

Yes, the mushrooms in the omelette were cooked; usually not in salads though :-) I can eat mushrooms in salads but not as many then as in a sauce or something and this omelette had too many cooked or not!

Scott's chloresterol is fine, unfortunately :-) He has high blood pressure but it's totally controlled with meds. I don't want meds for nothing so try to eat better and want to get my weight down and exercise up, etc. Sigh.

I've been out running around the last couple days though so have been eating out or fixing packaged foods when I get in late in the afternoons. Not enough fruits and veggies either.

typical 'veggie' ingredients for the veggie challenged cook.

had I been the one making your breakfast, the ingredients of it in order of priority might have been egg, avocado, scallion, cilantro, and a smidge of arugula or perhaps watercress.

Hmm, what would I put in a veggie omelette? I guess onion; sweet red, organge, or yellow pepper; a few muchrooms (more finely chopped or "baby" than the diner omelette had) and maybe some artichoke heart (I could live on artichokes). Usually I have a spinach and cheese omelette so one could do some spinach and I wouldn't mind.

But I don't care for cilantro, arugula, or watercress; I work hard not to choose things with cilantro in them and have been disappointed when I'll see something that looks yummy and then see that word on the menu. I love oregano and basil but not many salad greens (although I like spinach and all parsleys). Slice the avocado on the side, love them but not "warm". I'm truly not very picky though and would eat anything you prepared for me Fnord and love it :-)

To be honest, I haven't made an avocado, scallion, cilantro, arugula omlette as of yet, but I have no doubt it would be good provided the proportion of ingredients is correct. A common mistake for some cooks is not realizing that a little cilantro goes a long way. So too with arugula or watercress, which in this case would be standing in for the more pedestrian black pepper. The avocado, though possibly discernable by flavor, wouldn't be apparent visually, as only the inner yellow bit would be used and that would be pureed and mixed in with the egg. Visually, this omlette would present as scrambled-egg yellow with light green textural elements of chopped scallion and a lesser amount of darker green slivers of leafy vegetation.

I suppose an avocado, scallion, spinach, and oregano omlette would be just as tasty.
